Hub and the kids complain I don't make it often enough but with this easy version, thanks to your hint, we'll be having it a whole lot more. I used to make this all the time and the lemon and sugar sprinkled on top was phenomenal. Pour the batter over the apples and bake the pancake in the oven until puffed - about 20 minutes. Pour a little maple syrup over the top.
